The first part of this week wasn’t all too different from the past two. I’m starting to fall into a routine, I know which products I can and can’t get when I’m at the supermarket, I’m still not craving meat though I would love some cheese. So far I haven’t been able to find a vegan cheese that I can stomach on its own, though I did find some that tastes fine on a burger.
I went ahead and ordered this book on a whim but it turns out the recipes are a bit more daunting than I had anticipated. They all involve this thing called rejuvelac which takes a few days to make. I didn’t have time to get this started at the time so I decided to save the more complicated stuff for a lter day and try a simpler recipe for cashew cheese instead.
Turns out, that was not a good decision. I think vegan cheese making is a clear case of getting out of it what you put into it. The recipe I tried was super easy, just blend some stuff together, boil some agar agar and let it set up in the fridge. The problem is that you end up with a sort of jelly that tastes of raw garlic. I’m not sure what I expected, to be honest, but this definitely does not work. I’ll just have to try some of the more complicated recipes in the future.
